Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
½ cup breadcrumbs
2 tablespoons grated Parmesan cheese
1 packet ranch seasoning mix
Salt and black pepper to taste
Cooking spray for the air fryer basket
Instructions
1 In a large bowl, toss the chicken pieces with olive oil until evenly coated.
2 In a separate bowl, combine breadcrumbs, Parmesan cheese, ranch seasoning, salt, and pepper. Mix well.
3 Add the seasoned breadcrumb mixture to the chicken and toss to coat each piece thoroughly.
4 Preheat the air fryer to 400°F for 3 to 5 minutes. Lightly spray the air fryer basket with cooking spray.
5 Place the coated chicken pieces in a single layer in the air fryer basket. Work in batches if necessary to avoid overcrowding.
6 Air fry for 10 to 12 minutes, shaking the basket halfway through, until the chicken bites are golden brown and cooked through with an internal temperature of 165°F.
7 Let rest for a couple of minutes before serving with your choice of dipping sauce.
Notes
For extra crispiness, use panko breadcrumbs instead of regular. You can add a little cayenne pepper or smoked paprika for a spicier version. These chicken bites reheat well in the air fryer and are great for meal prep. Serve with ranch dressing, honey mustard, or buffalo sauce for dipping.
