2 tablespoons all-purpose flour
2 cups milk

32 ounces frozen tater tots
4 large eggs
1 cup shredded cheddar cheese
2 tablespoons chopped green onions (optional)
Butter or oil for cooking eggs


Instructions

Heat the oven to 425°F. Arrange the frozen tater tots in a single layer on a rimmed baking sheet and bake until golden and crispy, about 20 to 25 minutes, turning once halfway through.

While the tots bake, cook the sausage in a medium skillet over medium heat, breaking it into small pieces until no pink remains and the fat is rendered. Sprinkle the flour over the sausage and stir for 1 minute to cook the flour. Gradually whisk in the milk, scraping up any browned bits, and simmer until the gravy thickens, about 3 to 5 minutes. Season with salt and plenty of black pepper, then keep warm on low.

In a separate nonstick skillet, melt a little butter or heat oil over medium-low heat. Crack the eggs into the pan and cook to your preference—fried with runny yolks, scrambled, or over-easy work equally well.

Divide the crispy tater tots among serving bowls. Ladle the sausage gravy over the tots. Sprinkle each bowl with cheddar cheese so it melts into the hot gravy. Top with the cooked eggs and garnish with chopped green onions if you like.

Notes

For a lighter version use turkey breakfast sausage and low-fat milk. You can prepare the gravy a day ahead—store it covered in the refrigerator and gently reheat with a splash of milk. If you prefer, bake the eggs in the oven: crack them into a greased muffin tin and bake at 350°F for 12 to 15 minutes. Add sautéed bell peppers or mushrooms under the eggs for extra veggies. Leftovers keep well—store components separately and reheat in the microwave or oven, then assemble just before serving for best texture.
