Ingredients
For the Meatloaf:
- 1 lb ground beef (80/20 blend works best)
- ½ lb ground pork (optional for added flavor)
- ½ cup breadcrumbs
- 1 egg, beaten
- ¼ cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika (optional)
For the Filling:
- 4 oz cheddar cheese, cut into small cubes
For the Glaze:
- 2 tbsp ketchup
- 1 tbsp brown sugar
- 1 tsp Dijon mustard
Instructions
1️⃣ Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a mini muffin tin for easy cleanup.
2️⃣ Prepare the meat mixture:
In a large mixing bowl, combine the ground beef, ground pork (if using), breadcrumbs, beaten egg, milk, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and smoked paprika. Mix until just combined—don’t overwork the meat.
3️⃣ Stuff the morsels:
Take about 2 tablespoons of the meat mixture and flatten it in your palm. Place a cheddar cube in the center and fold the meat around it, sealing the edges. Roll into a smooth ball. Repeat with the remaining meat mixture and cheese.
4️⃣ Prepare the glaze: In a small bowl, mix together ketchup, brown sugar, and Dijon mustard. Set aside.
5️⃣ Bake the morsels:
Arrange the stuffed meatballs on the prepared baking sheet or in the mini muffin tin. Brush the tops generously with the glaze.
Bake in the preheated oven for 18-22 minutes, or until the internal temperature reaches 165°F (74°C) and the meatballs are cooked through.
6️⃣ Serve: Remove from the oven and let cool slightly before serving. Garnish with fresh parsley for a pop of color, if desired.
