This Cheesy Cajun Garlic Chicken Rotini Skillet is a bold, comforting one-pan meal that’s loaded with flavor. Juicy, seasoned chicken is seared to perfection and tossed with tender rotini pasta in a creamy garlic cheese sauce with just the right kick of Cajun spice. Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 teaspoons Cajun seasoning
1 tablespoon olive oil
3 cloves garlic, minced
2 cups rotini pasta
2 cups chicken broth
1/2 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Salt and black pepper to taste
1 tablespoon chopped parsley (optional)
Instructions
1️⃣ Season the chicken pieces with Cajun seasoning and a pinch of salt and pepper.
2️⃣ In a large skillet, heat olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
3️⃣ In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
4️⃣ Add the uncooked rotini pasta and chicken broth to the skillet. Bring to a boil, then reduce heat and simmer, stirring occasionally, for about 10 minutes or until the pasta is tender and most of the liquid has been absorbed.
5️⃣ Stir in the heavy cream and both cheeses, mixing until melted and the sauce is smooth and creamy.
6️⃣ Return the cooked chicken to the skillet and stir to combine. Let everything cook together for another 2-3 minutes until heated through.
7️⃣ Taste and adjust seasoning as needed. Sprinkle with chopped parsley before serving if desired.
Notes
You can use any short pasta like penne or fusilli if rotini isn’t available. For a spicier version, add a pinch of cayenne pepper or use a spicier Cajun blend. This dish also works well with leftover grilled chicken or rotisserie chicken for an even faster meal.
