Description

This hearty, cheesy casserole combines tender chicken, crispy turkey bacon, and creamy ranch-flavored potatoes for a comforting, crowd-pleasing dish. Perfect for family dinners or meal prep!

Ingredients

Scale

For the casserole:

  • 2.5 pounds yellow or red potatoes, chopped into bite-sized pieces
  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs, chopped into bite-sized pieces
  • 8 ounces sharp cheddar cheese, grated
  • 4 ounces smoked gouda cheese, grated
  • 1 pound cooked, crumbled turkey bacon
  • Olive oil
  • Salt, pepper, and garlic blend
  • 1 tsp smoked paprika

For the dressing:

  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup whole milk
  • 1 packet Ranch dressing seasoning mix

Garnish (optional):

  • Chopped green onions

Instructions

1️⃣ Cook the potatoes:
Bring a large pot of salted water to a boil. Add the chopped potatoes and boil until tender (about 10-15 minutes). Drain and set aside.

2️⃣ Prepare the chicken:
Place the chicken pieces in a mixing bowl. Drizzle with olive oil and season with salt, pepper, garlic blend, and smoked paprika. Stir to coat evenly.

3️⃣ Cook the chicken:
Cook the chicken in an air fryer at 400°F for about 8 minutes or until the internal temperature reaches 165°F. Alternatively, cook in a skillet over medium heat until done.

4️⃣ Make the ranch dressing:
In a separate bowl, whisk together mayonnaise, sour cream, whole milk, and Ranch seasoning mix until smooth.

5️⃣ Assemble the casserole:
Lightly grease a 9×13-inch baking dish. Combine the cooked potatoes, seasoned chicken, and prepared dressing in the dish, mixing gently to distribute evenly.

6️⃣ Add cheese and bake:
Sprinkle the grated sharp cheddar and smoked gouda cheeses evenly over the top. Bake in a preheated oven at 375°F for 15-20 minutes, or until the cheese is melted and slightly golden.

7️⃣ Finish with turkey bacon and garnish:
Remove the casserole from the oven. Top with cooked, crumbled turkey bacon. Garnish with chopped green onions if desired.

Notes

  • Make it ahead: You can assemble the casserole in advance and refrigerate until ready to bake. Add a few extra minutes to the baking time if cold.
