Ingredients
- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Olive oil (for cooking)
Instructions
1️⃣ Cook the pasta:
Bring a pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.
2️⃣ Sauté the aromatics:
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onions are soft and translucent (about 3-4 minutes).
3️⃣ Cook the beef:
Add the ground beef to the skillet. Break it apart with a spatula, cooking until browned and fully cooked, about 7-10 minutes. Drain any excess fat if needed.
4️⃣ Build the sauce base:
Pour in the diced tomatoes (with their juices), beef broth, and sprinkle in the Italian seasoning. Season with salt and pepper. Stir well and bring the mixture to a simmer.
5️⃣ Add the creamy elements:
Reduce the heat to low and stir in the Greek yogurt and Parmesan cheese. Mix until the sauce is smooth and creamy.
6️⃣ Combine pasta and sauce:
Gently fold the cooked penne pasta into the skillet, ensuring the pasta is fully coated in the sauce.
7️⃣ Adjust and rest:
Taste and adjust the seasoning if necessary. Let the dish sit for a few minutes off the heat to allow the sauce to thicken slightly.
8️⃣ Garnish and serve:
Serve warm, garnished with fresh basil or parsley for a pop of color and extra flavor. Enjoy your creamy beef pasta!
