Ingredients
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 2 cloves garlic, chopped
- 1/2 tsp ground fennel (optional, for added flavor)
- 1/2 tsp red pepper flakes (optional, for a bit of heat)
- 4 cups chicken broth
- 1 (14.5 oz) can petite diced tomatoes, undrained
- 8 oz pasta (such as ditalini, or gluten-free pasta for gluten-free option)
- 1 tsp Italian seasoning
- 1/2 cup Parmigiano Reggiano (Parmesan), grated
- 4 oz cream cheese, softened
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1 tbsp parsley, chopped (optional, for garnish)
Instructions
1️⃣ Brown the sausage: In a large saucepan over medium heat, cook the Italian sausage and diced onion together, breaking apart the sausage with a spoon as it cooks. Cook until the sausage is browned and the onion is softened. Drain any excess grease.
2️⃣ Add garlic and spices: Add the garlic, ground fennel, and red pepper flakes. Stir and cook for about 1 minute until fragrant.
3️⃣ Add liquids and pasta: Pour in the chicken broth, diced tomatoes (with their juices), pasta, and Italian seasoning. Stir to combine, then bring to a boil. Once boiling, reduce heat and let simmer for 6-8 minutes, or until the pasta is cooked to al dente.
4️⃣ Incorporate cheeses and cream: Add the grated Parmesan, softened cream cheese, and heavy cream. Stir and allow the cheeses to melt into the soup, about 3-5 minutes, until the soup is creamy and well blended.
5️⃣ Season and garnish: Taste and season with salt and pepper as needed. Stir in chopped parsley if desired.
6️⃣ Serve: Ladle the soup into bowls and enjoy while hot!
Notes
- Pasta tips: For best texture, add the pasta right before serving or cook it separately to prevent it from becoming overly soft in leftovers.
- Vegetable addition: Add baby spinach or kale during the final simmer for extra nutrition.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days; reheat on the stove, adding a little broth if the soup thickens.
