  • 2 tablespoons Butter.
  • 1 pound Ground beef.
  • 1 cup Onion, chopped.
  • 1 cup Carrot, diced.
  • 1 cup Potatoes, diced.
  • 1/2 cup Green pepper or Celery (optional), chopped.
  • 1 cup Tomato juice.
  • 11/2 teaspoon Salt.
  • 1/8 teaspoon Black pepper.
  • 1 teaspoon Seasoned salt.
  • 4 cups Milk, divided.
  • 1/3 cup Flour.

Instructions

  • Melt Butter, brown meat, add onion and cook until transparent.
  • Stir in remaining ingredients, except for flour and milk. Cover and cook over low heat until veggies are tender (20-25 minutes).
  • Combine flour with 1 cup of milk, stir mixture into soup and bring to a boil.
  • Add rest of milk stirring often, do not boil.

Notes

  • Meat Substitutes: You can substitute ground turkey or plant-based ground meat for a lighter or vegetarian version. Adjust seasoning as turkey and plant-based options tend to have a milder flavor.
  • Potato Variety: Yukon Gold potatoes offer a creamier texture, while Russet potatoes will break down more and help thicken the soup. Both work well, but Yukon Golds tend to hold their shape better during long cooking.
  • Dairy Substitutes: To make the soup dairy-free, replace the heavy cream with coconut milk, cashew cream, or any dairy-free alternative.
  • Freezing Tip: If you plan to freeze leftovers, avoid adding the cream before freezing. Instead, freeze the soup without the dairy and stir in the cream or milk when reheating.
