This fun and easy casserole brings all the bold flavors of a walking taco into a hearty, oven-baked dish. Crunchy corn chips, seasoned beef, melty cheese, and fresh toppings come together to create a crowd-pleasing meal perfect for busy weeknights or casual gatherings.


Ingredients

lbs ground beef
1 cup onion, chopped
3 oz cream cheese
1 packet taco seasoning
1 can green chilis
23 cups Fritos corn chips
1 cup shredded taco blend cheese
1 Roma tomato, chopped
12 cups shredded lettuce
Salsa and sour cream, for garnish


Instructions

Preheat the oven to 350°F.

In an oven-safe skillet over medium-high heat, cook the ground beef and chopped onion together until the beef is browned and the onions are softened.

Add the taco seasoning, green chilis, and cream cheese to the skillet. Stir and sauté until the cream cheese is fully melted and everything is well combined.

Spread a layer of Fritos corn chips over the beef mixture in the skillet and sprinkle the shredded taco blend cheese evenly on top.

Bake for 20 minutes, until the cheese is melted and bubbly.

Remove the casserole from the oven and top it with shredded lettuce and chopped Roma tomatoes.

Garnish with salsa and sour cream before serving.

Notes

For extra crunch, you can reserve some corn chips to sprinkle on top just before serving. Feel free to customize the toppings with sliced jalapeños, black olives, or avocado for even more flavor. If you don’t have an oven-safe skillet, you can transfer the beef mixture to a baking dish before topping and baking.
