Garlic Butter Chicken Bites with Asparagus

  • Author: Sophia

Description

Garlic Butter Chicken Bites with Asparagus is a flavorful and fast one-pan dinner that’s perfect for a low-carb, protein-packed meal. Tender chunks of chicken are seared to a golden brown, then tossed in a rich garlic butter sauce with crisp-tender asparagus. It’s simple, satisfying, and ready in about 20 minutes.

Ingredients

Scale

1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
1 bunch asparagus, trimmed and cut into 2-inch pieces
3 tablespoons butter
4 garlic cloves, minced
1 tablespoon olive oil
Salt and black pepper to taste
1/2 teaspoon paprika
1 tablespoon chopped parsley (optional)
Juice of half a lemon (optional)

Instructions

1️⃣ Season the chicken pieces with salt, pepper, and paprika.

2️⃣ Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 6-8 minutes, stirring occasionally, until browned and cooked through. Remove the chicken and set aside.

3️⃣ In the same skillet, melt the butter. Add the minced garlic and cook for about 30 seconds until fragrant.

4️⃣ Add the asparagus to the skillet and sauté for 3-4 minutes until it becomes bright green and tender-crisp.

5️⃣ Return the chicken to the skillet and toss everything together in the garlic butter until well coated and heated through.

6️⃣ Optional: Squeeze lemon juice over the top and sprinkle with chopped parsley before serving.

Notes

For extra depth of flavor, you can add a pinch of red pepper flakes to the butter. This dish pairs well with rice, mashed potatoes, or can be enjoyed on its own for a light meal. If your asparagus stalks are thick, consider blanching them briefly before sautéing to ensure they cook evenly.
