For the Parmesan Cream Sauce:

  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp Italian seasoning

For the Cheesy Roasted Potatoes:

  • 4 medium potatoes (cubed)
  • 2 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tbsp garlic powder
  • 1 tbsp parsley
  • Salt and pepper to taste

Instructions

1️⃣ Prepare the Chicken:

Heat the butter and olive oil in a large skillet over medium heat.

Season the chicken pieces with salt and pepper, then add them to the skillet along with the minced garlic.

Sauté for 7–10 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and keep warm.

2️⃣ Make the Parmesan Cream Sauce:

Using the same skillet, pour in the heavy cream. Add the Parmesan cheese, garlic powder, onion powder, and Italian seasoning.

Stir well and bring the sauce to a gentle simmer. Cook for about 5 minutes or until the sauce thickens.

Season with salt and pepper to taste.

3️⃣ Prepare the Cheesy Roasted Potatoes:

Preheat your oven to 400°F (200°C).

Toss the cubed potatoes with olive oil, garlic powder, parsley, salt, and pepper in a large mixing bowl.

Spread the potatoes out evenly on a baking sheet and roast for 25–30 minutes, or until golden and crispy, tossing halfway through.

Remove the potatoes from the oven, sprinkle with shredded cheddar and Parmesan cheese, and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

4️⃣ Assemble:

Pour the Parmesan cream sauce over the chicken bites and gently toss to coat evenly. Garnish with fresh parsley for a pop of color and flavor.

Serve the saucy chicken bites alongside the cheesy roasted potatoes for a delicious and satisfying meal.
