Layered Taco Bake

  • Author: Munil

Description

This Layered Taco Bake is a delicious, crowd-pleasing Tex-Mex casserole that combines the flavors of classic tacos with the simplicity of a layered dish. Perfect for busy weeknights, family dinners, or gatherings, this dish features seasoned ground beef (or alternatives), soft tortillas, beans, vegetables, and plenty of melted cheese, all baked together for a warm, comforting meal. The layers come together like a lasagna, creating a hearty, cheesy bake that’s easy to customize for different dietary needs. Top it off with your favorite taco toppings like sour cream, guacamole, or salsa for an added burst of flavor.

Ingredients

Scale
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3/4 cup water as per seasoning packet instructions
  • 1/2 cup salsa con queso
  • 3 pieces 8-inch flour tortillas soft taco size
  • 2 cups shredded Mexican cheese blend divided use

Instructions

  • In a large skillet, brown 1 lb of ground beef over medium-high heat, crumbling as it cooks for about 5-7 minutes. Drain any excess grease.
  • Add 1 packet of taco seasoning and 3/4 cup water. Stir and simmer until thickened, about 3-5 minutes. Stir in 1/2 cup salsa con queso and mix until well combined.
  • Preheat oven to 350°F (175°C). Spray an 8-inch round baking pan with nonstick cooking spray.
  • Place one flour tortilla at the bottom of the pan. Spread 1/3 of the taco filling over the tortilla, followed by 1/3 of the cheese. Repeat the layers two more times, finishing with a layer of cheese on top.
  • Bake in the preheated oven for 15-20 minutes, until cheese is melted and bubbly, and edges of tortillas are golden.
  • Allow the bake to cool for a few minutes before slicing. Serve with optional toppings like sour cream, guacamole, chopped tomatoes, lettuce, or jalapeños.

Notes

  • Customizable Protein:
    • While the traditional version uses ground beef, you can easily swap in ground turkey, chicken, or vegetarian crumbles for a lighter or vegetarian-friendly version. Adjust seasoning as needed depending on your protein choice.
  • Cheese Choices:
    • Cheddar and Monterey Jack melt beautifully, but feel free to use a Mexican cheese blend or Pepper Jack if you prefer extra flavor. For a lighter option, use reduced-fat cheeses.
  • Layering Tips:
    • For the best results, make sure your layers are even and well-distributed. This will help ensure every bite has a balance of ingredients. Using corn tortillas or tortilla chips can also add texture if you prefer a crispier bake.
  • Taco Seasoning:
    • Store-bought taco seasoning is convenient, but making your own can allow you to control the spice level and sodium. Feel free to adjust based on your personal preferences for spiciness and flavor intensity.
  • Add Vegetables for Extra Nutrition:
    • Feel free to add extra vegetables like bell peppers, zucchini, spinach, or corn to increase the nutritional value. This can make the dish heartier without adding many extra calories.
  • Dietary Adjustments:
    • Make this dish gluten-free by using corn tortillas or gluten-free wraps.
    • For a low-carb version, substitute low-carb tortillas or layer with grilled vegetables like zucchini or eggplant.
    • For a vegan taco bake, use plant-based meat substitutes and dairy-free cheese.
  • Serving Suggestions:
    • This taco bake pairs well with Mexican rice, a green salad, or corn salad. Garnish with fresh cilantro, diced tomatoes, and a squeeze of lime for a burst of freshness.
    • It also makes a great dish for potlucks, game day, or weeknight meals since it can be prepared in advance and easily reheated.
  • Storage and Reheating:
    • Leftovers store well in the fridge for 3-4 days in an airtight container. For longer storage, freeze individual portions for up to 2 months.
    • Reheat in the oven at 350°F to preserve the texture or in the microwave for a quicker option.
