  • 1 pound boneless, skinless chicken breasts, pat dry and cut into 1-inch pieces
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 2 tablespoons finely chopped fresh parsley
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons minced garlic
  • ½ medium lemon, juiced (about 2 tablespoons)

Instructions

1️⃣ Season the chicken: In a small bowl, mix together the oregano, basil, parsley, salt, and pepper. Sprinkle this seasoning mixture evenly over the chicken pieces, making sure to coat all sides. Toss to ensure even distribution.

2️⃣ Melt the butter: In a 12-inch skillet over medium heat, melt 2 tablespoons of butter. Tilt the pan to coat the base evenly.

3️⃣ Cook the chicken: Place the chicken pieces in the skillet in a single layer, making sure not to overcrowd the pan. Cook for 8-10 minutes, flipping halfway through, until the chicken is golden brown on all sides and nearly cooked through.

4️⃣ Add garlic and more butter: Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for an additional 1 minute, until fragrant and the chicken reaches an internal temperature of 165°F.

5️⃣ Add lemon juice: Drizzle the freshly squeezed lemon juice over the chicken, stirring everything to combine and coat the chicken with the flavorful sauce.

6️⃣ Serve: Serve the lemon garlic chicken bites immediately, garnished with extra fresh parsley if desired. These are perfect on their own, or alongside rice, pasta, or vegetables.
