Ingredients
14 oz kielbasa sausage, sliced into rounds
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
10 oz penne pasta
1 can (14.5 oz) diced tomatoes, undrained
1 cup shredded cheddar cheese
1 teaspoon paprika
Salt and pepper to taste
1 tablespoon chopped parsley (optional)
Instructions
Heat the olive oil in a large pot or deep skillet over medium heat. Add the sliced kielbasa and cook for about 4-5 minutes until browned. Remove the sausage and set aside.
In the same pot, add diced onion and cook until softened, about 3 minutes. Add the minced garlic and sauté for another 30 seconds.
Pour in the chicken broth, heavy cream, and diced tomatoes with their juices. Stir in the paprika, then add the uncooked penne pasta. Bring the mixture to a boil.
Reduce heat to a simmer and cover. Cook for about 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Return the kielbasa to the pot and stir in the shredded cheddar cheese. Cook for another 2-3 minutes until the cheese is melted and the dish is creamy.
Taste and adjust seasoning with salt and pepper as needed. Garnish with chopped parsley if desired and serve hot.

This dish is incredibly versatile—try adding spinach, bell peppers, or mushrooms for extra nutrition and flavor. For a spicier version, use hot kielbasa or add a pinch of red pepper flakes. Leftovers can be refrigerated and reheated the next day, making it a great meal prep option.
