Description

This Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken recipe is a flavorful and elegant dish that’s surprisingly easy to make. Juicy chicken breasts are filled with roasted red peppers, fresh spinach, and gooey mozzarella, then baked to perfection. It’s perfect for a weeknight dinner or a special occasion.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced
  • 1 cup fresh spinach
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

1️⃣ Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

2️⃣ Prepare the Chicken: Carefully slice along the side of each chicken breast to create a pocket, being careful not to cut all the way through.

3️⃣ Stuff the Chicken: Divide the roasted red peppers, spinach, and shredded mozzarella evenly among the chicken breasts, stuffing them into the pockets. Use toothpicks to secure the openings, if needed.

4️⃣ Season the Chicken: In a small bowl, mix olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush the mixture generously over both sides of each stuffed chicken breast.

5️⃣ Bake: Arrange the stuffed chicken breasts in the prepared baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

6️⃣ Serve: Remove the toothpicks, if used, and serve hot. Pair with a side salad, roasted vegetables, or a bed of pasta for a complete meal.

Notes

  • Cheese Alternatives: Substitute mozzarella with provolone, fontina, or gouda for a twist on flavor.
  • Add More Flavor: Include fresh basil leaves or a sprinkle of crushed red pepper flakes for extra flavor in the stuffing.
  • Leftovers: Store in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven to maintain juiciness.
  • Pan Sear Option: For a golden crust, sear the stuffed chicken breasts in a hot skillet for 2-3 minutes per side before baking.
