Ingredients
For the Stuffed Chicken:

Instructions
Prepare the Chicken Preheat the oven to 375°F (190°C). Place the chicken breasts on a cutting board and slice a pocket into the thickest side of each breast, being careful not to cut all the way through. Season the chicken inside and out with salt, pepper, paprika, and Italian seasoning.
Make the Filling In a bowl, combine the chopped roasted red peppers, spinach, minced garlic, and shredded mozzarella cheese. Mix well to ensure the flavors are evenly distributed.
Stuff the Chicken Carefully spoon the filling into each chicken breast, packing it in as much as possible without overflowing. Use toothpicks or kitchen twine to secure the openings and prevent the filling from spilling out while cooking.
Sear the Chicken Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Place the stuffed chicken breasts in the skillet and sear for 2–3 minutes per side, until golden brown.
Bake the Chicken Transfer the skillet to the preheated oven and bake for 18–20 minutes, or until the internal temperature of the chicken reaches 165°F (75°C). Remove from the oven and let the chicken rest for 5 minutes before slicing.
