Slow Cooker Pineapple Beef Loin

  • Author: Munil

Description

This Slow Cooker Pineapple Beef Loin is a delicious and easy-to-make dish that combines the sweet and tangy flavors of pineapple with the savory richness of soy sauce and garlic. The slow cooker method ensures that the beef becomes incredibly tender and juicy, absorbing all the flavors from the marinade while you go about your day. Whether you’re making this for a family dinner or meal prepping for the week, it’s a flavorful and satisfying dish that requires minimal effort. Pair it with rice, mashed potatoes, or your favorite vegetables for a well-rounded, hearty meal.

Ingredients

Scale
  • 2 lbs beef loin
  • 1 cup pineapple chunks (fresh or canned)
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • ½ tsp black pepper
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced

Instructions

In a small bowl, mix together the pineapple juice, soy sauce, brown sugar, garlic powder, ground ginger, and black pepper.

Place the beef loin in the slow cooker and top with pineapple chunks, sliced onion, and bell pepper.

Pour the pineapple juice mixture over the beef and vegetables.

Cover the slow cooker and cook on low for 6-8 hours, or until the beef is tender.

Once cooked, remove the beef from the slow cooker and let it rest for a few minutes before slicing.

Serve the beef slices with the pineapple and vegetables, spooning some of the cooking juices over the top.

Notes

  • Choosing the Beef Cut: This recipe works best with beef loin, but if you prefer, you can use other slow-cooking cuts like chuck roast or brisket. These cuts are slightly fattier, which can add extra flavor and juiciness.
  • Pineapple Choice: You can use either fresh or canned pineapple for this recipe. Fresh pineapple offers a slightly more vibrant flavor, while canned pineapple (with its juice) adds a bit more sweetness to the dish.
  • Balancing Flavors: Taste the sauce before adding it to the slow cooker. If it feels too sweet, balance it with a bit more soy sauce or vinegar. If it’s too salty, add a splash of pineapple juice or a pinch more brown sugar to sweeten it.
  • Cooking Time: Cooking on low heat for 6-8 hours gives the best results, as it allows the beef to become tender without drying out. If you’re short on time, cooking on high for 4-5 hours will also work, but the texture may not be as tender.
  • Thickening the Sauce: If you prefer a thicker sauce, remove the beef after cooking and simmer the remaining liquid in a saucepan with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water). This will create a rich, thick sauce that clings beautifully to the beef.
  • Spicing It Up: For those who enjoy a bit of heat, consider adding red chili flakes or a diced jalapeño to the sauce. This will give the dish a subtle kick that complements the sweetness of the pineapple.
  • Make-Ahead Tip: You can prep the beef and marinade the night before for even better flavor. Alternatively, cook the dish ahead of time and reheat it when ready to serve. The flavors continue to develop as the dish sits, making it great for leftovers.
