Ingredients
- 16 oz. mushrooms (button or cremini)
- 1 tbsp. olive oil
- 2 tbsp. butter, divided
- 6 cloves garlic, minced
- 1 tsp. kosher salt
- 1 ½ tsp. Worcestershire sauce
- 1 ½ tsp. soy sauce
- ½ tsp. paprika
- ½ tsp. onion powder
- ½ tsp. dried oregano
- ½ tsp. dried tarragon
- ½ tsp. black pepper
- ¼ tsp. chili powder
- ½ tsp. browning sauce (like Gravy Master), optional
- Fresh chives, chopped, for garnish
Instructions
1️⃣ Prepare the mushrooms: Gently clean the mushrooms by wiping them with a damp cloth. Trim off any dry ends of the stems if needed.
2️⃣ Sear the mushrooms: Heat a medium skillet over medium heat. Add the olive oil and 1 tablespoon of butter. Once the butter melts, add the mushrooms in a single layer, sprinkle with kosher salt, and let them cook undisturbed for about 3 minutes to develop a golden sear.
3️⃣ Season the mushrooms: In a small bowl, mix together the paprika, onion powder, dried oregano, dried tarragon, black pepper, and chili powder. Set this spice mix aside.
4️⃣ Add garlic and spices: Add the minced garlic and the prepared spice mix to the mushrooms. Stir well, cooking for another 1-2 minutes until the garlic is fragrant and the spices coat the mushrooms evenly.
5️⃣ Optional browning sauce: If using, stir in the browning sauce. Cook for an additional 1-2 minutes to achieve a deeper color and slightly sweet undertone.
6️⃣ Add Worcestershire and soy sauces: Pour in the Worcestershire sauce and soy sauce, stirring to combine. Allow the mushrooms to cook for another 2-3 minutes, letting the sauce reduce and absorb into the mushrooms.
7️⃣ Finish with butter: Stir in the remaining tablespoon of butter, letting it melt and coat the mushrooms for a glossy finish.
8️⃣ Garnish and serve: Sprinkle with freshly chopped chives just before serving for a pop of color and fresh flavor.
