Ingredients
- 2 large chicken breasts
- 1 teaspoon seasoned salt
- ½ teaspoon black pepper
- 1 tablespoon butter (plus extra as needed)
- 1 medium onion, sliced ¼-inch thick
- ½ pound button mushrooms, sliced
- ¼ pound Monterey Jack cheese, shredded
- Salt to taste
Instructions
1️⃣ Prepare the Chicken:
Slice each chicken breast horizontally to create two thinner pieces.
Place the chicken pieces between plastic wrap and pound to an even thickness using a meat mallet.
Season both sides of the chicken with seasoned salt and black pepper.
2️⃣ Sauté the Vegetables:
Melt 1 tablespoon of butter in a skillet over medium-low heat.
Add the sliced onions and a pinch of salt. Sauté for 3–4 minutes until softened.
Stir in the sliced mushrooms and cook for another 3–4 minutes until browned.
Remove the onions and mushrooms from the skillet and set aside.
3️⃣ Cook the Chicken:
Add more butter to the skillet if needed. Increase the heat to medium.
Place the seasoned chicken breasts in the skillet and cook for 6–8 minutes on the first side until golden brown.
Flip the chicken and cook for an additional 3–4 minutes, or until fully cooked (internal temperature reaches 165°F/74°C).
4️⃣ Assemble the Dish:
Reduce the heat to low. Top each chicken breast with the sautéed onions and mushrooms.
Sprinkle the shredded Monterey Jack cheese evenly over the top.
Cover the skillet with a lid and let the cheese melt for 1–2 minutes.
5️⃣ Serve:
Remove the smothered chicken from the skillet and serve immediately.
Pair with mashed potatoes, rice, or steamed vegetables for a complete meal.
