A hearty one-pot meal that combines the flavors of a classic bacon cheeseburger with tender, fluffy rice. Crispy bacon, savory ground beef, melted cheddar cheese, and a hint of tangy ketchup and mustard come together for a comforting dinner that’s easy to prepare and perfect for weeknights.


Ingredients

1 cup long-grain white rice
2 cups beef broth or water
4 slices bacon, diced
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
2 tablespoons ketchup
2 tablespoons yellow mustard
Salt and pepper to taste
1 cup shredded cheddar cheese
2 tablespoons chopped green onions (optional)


Instructions

In a large skillet over medium heat cook the diced bacon until crisp, then transfer the bacon pieces to a plate lined with paper towel and leave the drippings in the pan.

Add the ground beef and diced onion to the skillet and cook, stirring occasionally, until the beef is browned and the onion is softened. Drain off any excess fat if needed. Stir in the minced garlic and Worcestershire sauce and cook for another minute until fragrant.

Stir the rice into the beef mixture, coating each grain in the drippings and seasonings. Pour in the beef broth or water along with the ketchup and mustard. Season with salt and pepper, then bring to a gentle boil.

Reduce the heat to low, cover the skillet, and simmer for 18 to 20 minutes or until the rice is tender and the liquid has been absorbed.

Remove the skillet from the heat and stir in the shredded cheddar cheese until it melts evenly through the rice. Sprinkle the reserved bacon and chopped green onions over the top before serving.

Notes

You can swap out white rice for brown rice or a rice blend—just extend the simmering time and add a little extra liquid if needed. For extra veggies, fold in frozen peas or diced bell peppers along with the rice. If you like a bit of heat, stir in a dash of hot sauce or some chopped jalapeños. Leftovers store well in the refrigerator and can be reheated on the stovetop or in the microwave for a quick lunch.
