Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms sliced
  • 4 cloves garlic minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  • Preheat oven to 400°F (200°C).
  • Using a sharp knife, carefully cut a pocket into each chicken breast. Season the inside and outside with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add butter and melt. Sauté mushrooms for 5-7 minutes until golden, then add garlic and cook for 1-2 minutes. Remove from heat and cool slightly.
  • Combine mozzarella and Parmesan cheese in a bowl.
  • Fill each chicken pocket with the mushroom mixture and cheese mixture.
  • Place stuffed chicken in a baking dish. Bake for 25-30 minutes or until cooked through and cheese is melted.
  • Garnish with chopped parsley before serving.

Notes

  • Choosing Chicken: Boneless, skinless chicken breasts work best for stuffing. Choose large breasts to allow room for filling without the risk of tearing.
  • Filling: Mozzarella and cheddar cheese offer the best combination of stretch and flavor, but you can mix other cheeses like Parmesan for extra richness. Make sure the mushroom mixture is cooled before adding the cheese to prevent melting too early.
  • Sealing the Chicken: Use toothpicks or kitchen twine to keep the stuffing securely inside. If neither is available, place the chicken seam-side down during cooking to help prevent the filling from spilling out.
  • Cooking Method: For a crispy exterior, pan-sear the stuffed chicken for a few minutes before baking. This adds texture and ensures even cooking. Be sure to use a meat thermometer to check for doneness (165°F) to avoid overcooking and drying out the chicken.
  • Garlic Butter Sauce: The garlic butter sauce enhances the flavors of the stuffed chicken and adds moisture. You can add white wine or heavy cream for a gourmet touch. Baste the chicken with this sauce during cooking to keep it moist and flavorful.
  • Make Ahead: The stuffed chicken can be assembled up to 24 hours ahead of time and stored in the refrigerator. This makes it a great option for meal prep or hosting, so you can spend more time with guests and less time cooking.
  • Freezing Option: Freeze the stuffed chicken before cooking for up to 3 months. Bake from frozen with a slightly extended cooking time for a convenient dinner option.
