Description

This comforting, creamy soup is loaded with cheesy goodness, tender vegetables, and crispy turkey bacon, all enhanced by the tangy flavor of ranch seasoning. Perfect for cozy evenings or a quick, hearty meal.

Ingredients

Scale
  • Protein and Dairy:
    • 6 slices turkey bacon, chopped
    • 2 cups shredded sharp cheddar cheese
    • 1 cup heavy cream
    • 4 cups chicken or vegetable broth
  • Vegetables:
    • 2 medium potatoes, peeled and diced
    • 1 cup carrots, diced
    • 1 cup celery, diced
    • 1 medium onion, finely chopped
    • 3 cloves garlic, minced
  • Seasoning and Flavor:
    • 1 packet (1 oz) ranch seasoning mix
    • 1 tbsp olive oil or butter (for sautéing vegetables)
    • Salt and pepper to taste
    • 2 tbsp chopped parsley (optional, for garnish)

Instructions

1️⃣ Cook the Turkey Bacon:
Heat a large pot or Dutch oven over medium heat. Add the chopped turkey bacon and cook until crispy, about 5–6 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate.

2️⃣ Sauté the Vegetables:
In the same pot, add olive oil or butter. Stir in the onion, carrots, and celery, and sauté for 4–5 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

3️⃣ Add Broth and Potatoes:
Pour in the chicken or vegetable broth and bring to a simmer. Add the diced potatoes and cook for 10–12 minutes or until the potatoes are tender.

4️⃣ Incorporate Ranch and Cheese:
Stir in the ranch seasoning mix and heavy cream, ensuring it is well combined. Gradually add the shredded cheddar cheese, stirring constantly, until the cheese is fully melted and the soup is creamy.

5️⃣ Adjust Seasoning:
Taste and season with salt and pepper as needed.

6️⃣ Serve and Garnish:
Ladle the soup into bowls and top with the crispy turkey bacon. Sprinkle with chopped parsley for garnish if desired. Serve hot with crusty bread or crackers.

Notes

  • Cheese Tip: Use freshly shredded cheese for a smoother texture as pre-shredded cheese may contain additives that prevent it from melting well.
  • Vegetable Variations: Add corn, broccoli, or peas for extra flavor and nutrition.
  • Make It Lighter: Substitute heavy cream with half-and-half or whole milk for a lighter version.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, stirring occasionally.
