Description
This Crockpot Tuscan Chicken is a creamy, flavorful dish featuring tender chicken, sun-dried tomatoes, and a rich Parmesan cream sauce. It’s an easy, set-it-and-forget-it meal that pairs perfectly with pasta, rice, or mashed potatoes!
Ingredients
- 4 boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning (store-bought or homemade)
- Kosher salt and freshly ground black pepper, to taste
- 8.5 ounces sun-dried tomatoes, drained and chopped (1 jar)
- ½ cup low-sodium chicken stock
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 1 cup baby spinach, chopped
- Fresh parsley or basil, optional for garnish
Instructions
1️⃣ Prepare the crockpot: Spray the crockpot insert with nonstick spray to prevent sticking.
2️⃣ Season the chicken: Place the chicken breasts in the crockpot and sprinkle with garlic, Italian seasoning, salt, and pepper.
3️⃣ Add liquids & tomatoes: Pour in the sun-dried tomatoes and chicken stock.
4️⃣ Slow cook: Cover and cook on HIGH for 4 hours (or LOW for 6-7 hours) until the chicken is tender and fully cooked.
5️⃣ Make the creamy sauce: Remove the chicken and set it aside. Whisk in the heavy cream and Parmesan cheese. Stir in the spinach and let it cook for a few minutes until wilted.
6️⃣ Combine & serve: Return the chicken to the crockpot, spoon the sauce over the top, and let it warm for a few minutes. Garnish with fresh parsley or basil, if desired.
