Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and black pepper to taste
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 ripe tomatoes, sliced
4 slices fresh mozzarella cheese
Fresh basil leaves
Balsamic glaze for drizzling
Instructions
1 Preheat the grill to medium-high heat. Brush the chicken breasts with olive oil and season with salt, pepper, garlic powder, and Italian seasoning.
2 Grill the chicken for about 5 to 6 minutes per side, or until cooked through and the internal temperature reaches 165°F. Remove from the grill and let rest for a few minutes.
3 While the chicken is still warm, layer each piece with slices of tomato and mozzarella. Cover with foil or place back on the grill briefly with the lid closed to slightly melt the cheese.
4 Transfer the chicken to a serving platter. Top with fresh basil leaves and drizzle with balsamic glaze.
