Description
This crispy, cheesy Mexican pizza is a delicious fusion of tacos and pizza, loaded with seasoned beef, refried beans, and gooey melted cheese. It’s easy to make and perfect for a fun family dinner!
Ingredients
- 1 lb lean ground beef
- 1 packet (1 oz) taco seasoning
- ½ cup water
- 6 medium flour tortillas
- 1 can (16 oz) refried beans
- 1 can (10 oz) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives
Instructions
1️⃣ Preheat the Oven
Preheat the oven to 375°F. Spray two baking sheets with non-stick spray and place 3 tortillas on each sheet.
2️⃣ Crisp the Tortillas
Bake the tortillas for 3–5 minutes, flip, and bake for another 2–5 minutes until golden and crispy. Set aside.
3️⃣ Cook the Beef
In a skillet over medium-high heat, cook and crumble the ground beef until browned. Drain any excess grease.
4️⃣ Season the Meat
Add the taco seasoning and water to the cooked beef. Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes. Set aside.
5️⃣ Assemble the Pizzas
Warm the refried beans in a microwave-safe bowl. Spread a thin layer on one crispy tortilla. Top with ⅓ of the seasoned meat, then place another tortilla on top.
6️⃣ Add Sauce & Toppings
Spread 3 tablespoons of enchilada sauce over the top tortilla. Sprinkle with cheddar and pepper-jack cheese, then add diced tomatoes, green onions, and sliced black olives.
7️⃣ Bake the Pizzas
Repeat the process with the remaining tortillas to create three pizzas. Place them back in the oven and bake for 5 minutes, or until the cheese is melted and bubbly.
8️⃣ Serve & Enjoy
Let the pizzas cool slightly before slicing into quarters. Serve immediately and enjoy the crispy, cheesy goodness!

- For a crunchier texture, air-fry the tortillas instead of baking them.
