This grilled cheese takes a classic sandwich to the next level by adding spicy jalapeños, creamy mozzarella, and a hint of freshness from cilantro. The combination of sharp cheddar and mozzarella gives you a gooey, flavorful bite, while the buttered sourdough provides a crisp, golden crust. Perfect for a quick lunch or an indulgent snack!


Ingredients

  • 4 slices of sourdough bread
  • 4 slices of sharp cheddar cheese
  • 2 slices of mozzarella cheese
  • 2 fresh jalapeños, thinly sliced
  • 2 tablespoons butter, softened
  • 1 tablespoon fresh cilantro, chopped
  • Pinch of crushed red pepper flakes (optional)

Instructions

1️⃣ Preheat the skillet: Place a skillet or griddle over medium heat.

2️⃣ Butter the bread: Spread the softened butter evenly on one side of each slice of sourdough bread.

3️⃣ Assemble the sandwiches: On the unbuttered side of two slices of bread, layer 2 slices of sharp cheddar cheese. Add 1 slice of mozzarella cheese on top of the cheddar. Evenly distribute the jalapeño slices over the mozzarella. Top with the remaining slice of cheddar cheese for each sandwich.

4️⃣ Complete the sandwich: Place the remaining slices of bread on top, with the buttered side facing out.

5️⃣ Grill the sandwiches: Place the assembled sandwiches onto the preheated skillet. Grill for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.

6️⃣ Garnish and serve: Remove from the skillet and sprinkle with fresh cilantro and a pinch of crushed red pepper flakes (optional). Slice the sandwiches in half and serve immediately, enjoying the melty, spicy goodness!

Notes

  • For even more heat, you can leave the seeds in the jalapeños, or add more red pepper flakes.
  • Sourdough bread adds great texture, but you can substitute with your favorite bread if you prefer.
