No-Bake Coconut Pecan Praline Dreams are a delightful blend of crunchy toasted pecans, chewy coconut, and a rich, caramelized praline coating—all without the need for baking! These treats are quick and easy to prepare, making them perfect for busy days, hot weather, or when you need a sweet fix without turning on the oven. With a flavor profile that is sweet, nutty, and slightly buttery, these pralines are ideal for parties, as a gift, or simply for indulging yourself.

Ingredients

Scale
  • 2 cups granulated sugar For sweetness and structure
  • 1/2 cup evaporated milk Adds creaminess to the mixture
  • 1/2 cup corn syrup Helps bind the cookies and adds sweetness
  • 1/2 cup unsalted butter Contributes richness and smooth texture
  • 1/4 teaspoon salt Balances the sweetness
  • 2 cups toasted pecans chopped (Adds crunch and nutty flavor)
  • 2 cups shredded coconut Brings a tropical sweetness and texture
  • 1 teaspoon vanilla extract Enhances overall flavor

Instructions

  • Prepare Your Work Area: Lay out sheets of wax paper on your countertop where you’ll drop the cookie mixture to set. Prepping the area ensures smooth and efficient workflow.
  • Combine Ingredients in a Pot: In a medium-sized pot, combine the granulated sugar, evaporated milk, corn syrup, unsalted butter, and salt. Stir continuously over medium heat until the ingredients blend together. Ensures even mixing and prevents burning.
  • Bring to a Boil: Allow the mixture to come to a rolling boil, then let it boil for 3 minutes, stirring occasionally. This step achieves the right consistency for setting the cookies.
  • Incorporate Nuts and Coconut: Remove the pot from heat and stir in the chopped toasted pecans, shredded coconut, and vanilla extract. Adds crunch, sweetness, and enhanced flavor.
  • Drop the Mixture onto Wax Paper: Using a tablespoon or small scoop, drop spoonfuls of the mixture onto the wax paper, spacing them apart slightly. Form cookies with a rustic, homemade appearance.
  • Cool and Set: Allow the cookies to cool on the wax paper for 20-30 minutes until firm to the touch. Essential for the praline mixture to set into cookie form.

Notes

  • Texture Variations: For a softer, chewier praline, store the clusters at room temperature. For a firmer texture, refrigerate the pralines after they’ve set.
  • Customizations:
    • Vegan Option: Substitute the butter with plant-based butter, and use coconut cream or dairy-free condensed milk.
    • Nut Alternatives: If pecans aren’t available, walnuts, almonds, or cashews can be used as substitutes.
    • Flavor Boosts: Add spices like cinnamon or nutmeg for a holiday twist, or a pinch of sea salt for a salted praline version.
  • Storage: Store the pralines in an airtight container. They will last up to two weeks in the refrigerator or up to three months if frozen.
