Ingredients

Scale
  • 2 cups all-purpose flour For the shortbread crust
  • 1/2 cup powdered sugar Adds sweetness to the crust
  • 1 cup unsalted butter softened (Provides richness and structure to the crust)
  • 1 cup unsalted butter For the caramel layer, creating a rich base
  • 1 cup packed brown sugar Adds sweetness and depth to the caramel layer
  • 1/4 cup light corn syrup Helps prevent crystallization in the caramel
  • 1 can 14 oz sweetened condensed milk (Adds creaminess to the caramel layer)
  • 2 cups coarsely chopped pecans For the topping, adding crunch and flavor
  • 1 1/2 cups semisweet chocolate chips Creates a smooth, chocolatey top layer

Instructions

  • Prepare the Crust: Preheat oven to 350°F (175°C). In a large bowl, combine flour, powdered sugar, and softened butter. Mix until the dough comes together. Press the dough evenly into a greased 9×13-inch baking pan. Bake for 15-20 minutes, until edges are lightly golden. Set aside. Create a buttery, firm base for the bars.
  • Make the Caramel Layer: In a medium saucepan, melt butter over medium heat. Add brown sugar, corn syrup, and sweetened condensed milk. Bring to a boil, stirring constantly. Reduce heat and simmer for 5-7 minutes, until thickened and deep caramel color. Pour evenly over baked crust.Create a rich, smooth caramel layer.
  • Add the Topping: Sprinkle chopped pecans evenly over the caramel layer. Bake for an additional 10-15 minutes, until caramel is bubbly and pecans are toasted. Toast pecans for added flavor and texture.
  • Add the Chocolate: Remove from oven and immediately sprinkle chocolate chips over the hot caramel and pecans. Let sit for a few minutes to melt, then spread evenly with a spatula. Create a glossy, chocolatey top layer.
  • Cool and Set: Allow bars to cool completely at room temperature, then refrigerate for at least 1 hour to set the chocolate. Ensures bars are firm and easy to cut.
  • Cut and Serve: Once fully set, cut into squares and serve. Store leftovers in an airtight container at room temperature or in the refrigerator. Ready to enjoy or share!

Notes

  • Use High-Quality Ingredients: The flavors of this dessert are simple, so using fresh, high-quality ingredients like real butter, premium chocolate chips, and fresh pecans will make a big difference in the final product.
  • Ensure Proper Caramel Consistency: Be mindful when cooking the caramel. Stir it constantly and watch closely to avoid burning or overcooking, as this could result in a hard or bitter caramel. If you want a softer caramel, cook it slightly less.
  • Press the Crust Firmly: When preparing the shortbread crust, press it evenly and firmly into the baking dish. This ensures the base holds up well against the gooey caramel layer without crumbling when you cut the bars.
  • Allow Proper Cooling: After adding the chocolate layer, it’s crucial to let the bars cool completely before cutting. Refrigerating them for about an hour will help set the layers and make slicing much easier.
  • Customization Options: You can easily modify this recipe by experimenting with different types of nuts or chocolates. For a different flavor profile, try using dark or white chocolate, or substitute the pecans with walnuts, almonds, or a mix of nuts.
  • Storage Tips: Store the bars in an airtight container in the refrigerator to keep them fresh for up to a week. If you want to save them for longer, freeze them with layers of parchment paper in between to prevent sticking.
