Ingredients
- 3 lbs chuck roast
- 2 cups BBQ sauce
- 1 lb bacon, cooked and crumbled (divided)
- 1/2 onion, sliced
- 2 tbsp Worcestershire sauce
- 3 cloves garlic, minced
- 1/4 cup brown sugar
- 1 (4 oz) can diced jalapeños (divided)
- Sliced Colby Jack cheese
- 6 buns
- Crispy fried onions for topping
Instructions
1️⃣ Prepare the Slow Cooker: Place the chuck roast in the slow cooker.
2️⃣ Add Ingredients: Pour in the BBQ sauce, then add half of the crumbled bacon, the sliced onion, Worcestershire sauce, minced garlic, brown sugar, and half of the diced jalapeños. Stir lightly to coat the beef.
3️⃣ Cook the Beef: Cover and cook on low for 6-8 hours or high for 4-6 hours, until the meat is tender and falls apart easily with a fork.
4️⃣ Shred the Beef: Once cooked, shred the beef directly in the slow cooker using two forks. Drain most of the liquid, leaving just enough to keep the meat moist and flavorful.
5️⃣ Assemble the Sandwiches:
- Place a slice of Colby Jack cheese on the bottom half of each bun.
- Add a generous portion of shredded beef.
- Top with the remaining crumbled bacon, the remaining diced jalapeños, and a handful of crispy fried onions.
6️⃣ Serve: Place the top half of the bun over the fillings and serve warm!
