For the Chicken & Casserole:

  • 1 pound raw chicken breast, diced
  • 2 cups instant rice
  • 3 cups frozen mixed vegetables (like carrots, peas, and broccoli)
  • 1 cup teriyaki sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For Garnish (Optional):

  • Sesame seeds
  • Sliced green onions

Instructions

1️⃣ Preheat the Oven:

Set your oven to 375°F (190°C) to preheat.

2️⃣ Marinate the Chicken:

In a large bowl, toss the diced chicken with ½ cup teriyaki sauce, garlic powder, salt, and pepper.

Let it marinate for 5 minutes to absorb the flavors.

3️⃣ Cook the Chicken:

Heat the vegetable oil in a large skillet over medium-high heat.

Add the marinated chicken and cook for 5-7 minutes, or until it’s mostly cooked through.

4️⃣ Prepare the Rice:

While the chicken is cooking, prepare the instant rice according to package instructions.

Usually, this means boiling water, adding rice, and letting it sit covered for 5 minutes.

5️⃣ Assemble the Casserole:

In a large casserole dish, combine the cooked chicken, prepared rice, frozen vegetables, and the remaining teriyaki sauce.

Stir everything together until well mixed.

6️⃣ Bake the Casserole:

Cover the dish with foil and bake for 20-25 minutes, or until the vegetables are heated through and the flavors have blended.

7️⃣ Garnish & Serve:

Remove from the oven, and optionally sprinkle with sesame seeds and sliced green onions before serving.

Notes

Make it Spicy: Add red pepper flakes or a drizzle of sriracha for some heat!
Use Fresh Vegetables: If using fresh veggies, blanch them in boiling water for 2-3 minutes before adding to the casserole.
Swap the Rice: Try brown rice, quinoa, or cauliflower rice for a different texture.
