Cowboy Stir Fry Delight

This delicious cowboy stir fry delight is a fantastic dish that's sure to impress. Made with smoked sausage, 1½ lbs yukon gold potatoes, and 1 medium zucchini, it combines great flavors and textures for a memorable meal.

Ingredients
  

  • 14 oz smoked sausage, sliced into rounds (turkey or vegetarian sausage works too)
  • 1½ lbs Yukon Gold potatoes, sliced (or baby potatoes halved)
  • 1 medium zucchini, chopped
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 2 tbsp oil (avocado or olive oil)
  • Fresh parsley for garnish (optional)

Method
 

  1. Preheat your griddle or skillet by heating a Blackstone griddle or large skillet over medium-high heat for 3–5 minutes. Add 1 tablespoon of oil.
  2. Begin cooking the potatoes by adding sliced Yukon Gold potatoes to the griddle. Season them with garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 10–12 minutes, stirring occasionally, until they are golden brown and fork-tender.
  3. Brown the sausage by pushing the potatoes to one side of the griddle. Add the remaining 1 tablespoon of oil and the sliced sausage. Cook for about 5 minutes, stirring occasionally, until the sausage is browned and slightly crisp on the edges.
  4. Incorporate the vegetables by stirring in the zucchini, onion, and red bell pepper. Cook for 5–7 minutes until the vegetables are tender but still slightly crisp.
  5. Adjust seasoning and serve by tasting the dish and adjusting salt and pepper as needed. Garnish with fresh parsley if desired and serve hot.
