- Combine 2 lbs boneless skinless chicken breasts, 2 cans (14.5 oz each) diced tomatoes, 2 cups chicken broth, 2 tablespoons taco seasoning, 2 teaspoons minced garlic, ½ cup chopped onion, 1 chopped green bell pepper, and 1 chopped red bell pepper in a 6 quart crock pot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the chicken, shred it, and return it back to the crock pot.
- Stir to combine the flavors and serve with your favorite toppings.
