Preheat your oven to 400°F (200°C). Cut the top off the garlic head, drizzle it with olive oil, wrap it in foil, and roast for about 30-35 minutes until soft and caramelized.
In a saucepan over medium-low heat, combine the heavy cream and the roasted garlic (squeeze out the cloves from the skins). Stir gently for about 3-5 minutes until heated through.
Mix in the grated Parmesan cheese and Italian seasoning. Stir well until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
Remove from heat and let it cool slightly before adding to your pizza dough.
