Ingredients
  

  • 2 large boneless, skinless chicken breasts (about 1 lb), cooked and shredded
  • 3 cups fresh baby spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup non-fat Greek yogurt
  • 1/2 cup light cream cheese, softened
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the shredded chicken, spinach, chopped artichokes, Greek yogurt, softened cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, and black pepper until well combined.
  3. Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  4. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the casserole is bubbly.
  5. Allow the casserole to cool for 5-10 minutes before serving.
