Method
- Cook the beef bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain.
- Remove excess grease from the skillet, leaving just enough to coat the pan. Add sliced onions and cook until caramelized (about 10-15 minutes). Pour in the Irish stout and simmer until reduced by half. Season with salt and pepper. Set aside.
- In a mixing bowl, combine ground beef, Worcestershire sauce, salt, and pepper. Form into 4 patties, slightly larger than the buns.
- Grill or pan-fry patties over medium-high heat for 3-4 minutes per side (or to desired doneness). In the last minute, top with cheddar cheese and cover to melt.
- In a bowl, stir together sour cream, Dijon mustard, and a pinch of salt to make the sauce.
- Toast brioche buns in a skillet with butter until golden brown.
Assemble: bun bottom → cheeseburger patty → caramelized onions → 2 slices beef bacon → dollop of sauce → bun top.
- Serve hot with fries, chips, or a cold stout.
