Spicy Sweet Chicken Diablo Delight

This flavorful spicy sweet chicken diablo delight is a crowd-pleaser that's easy to prepare. Made with 2 lbs boneless, 1 large red bell pepper, and 1 large yellow bell pepper, it's perfect for a weeknight dinner or special occasion.

Ingredients
  

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 large red bell pepper, seeded and cut into 1-inch pieces
  • 1 large yellow bell pepper, seeded and cut into 1-inch pieces
  • 1 large onion, cut into 1-inch pieces
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha (or more, to taste)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon sesame oil
  • 1/4 cup chopped green onions, for garnish
  • Sesame seeds, for garnish
  • Cooked rice, for serving

Method
 

  1. In a medium bowl, combine the chicken pieces, 1 tablespoon of soy sauce, 1 tablespoon of honey, 1 teaspoon of rice vinegar, 1/2 teaspoon of sriracha (or less, if you're sensitive to spice), 1 teaspoon of cornstarch, and 1 teaspoon of sesame oil.
  2. Mix well to ensure all the chicken pieces are evenly coated.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours.
  4. In a small bowl, whisk together the remaining 3 tablespoons of soy sauce, 3 tablespoons of honey, 1 tablespoon + 1 teaspoon of rice vinegar, the remaining 2 1/2 teaspoons of sriracha, and 2 tablespoons of water.
  5. Set aside.
  6. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  7. Add the marinated chicken to the skillet in a single layer, being careful not to overcrowd the pan. If necessary, cook the chicken in batches.
  8. Cook for 5-7 minutes, or until the chicken is browned on all sides and cooked through. Remove the chicken from the skillet and set aside.
  9. Add the remaining 1 tablespoon of olive oil to the skillet.
  10. Add the onion, bell peppers, garlic, and ginger to the skillet.
  11. Cook for 5-7 minutes, or until the vegetables are tender-crisp, stirring occasionally.
  12. Return the cooked chicken to the skillet with the vegetables.
  13. Pour the prepared sauce over the chicken and vegetables.
  14. Bring the mixture to a simmer over medium heat.
  15. Cook for 3-5 minutes, or until the sauce has thickened slightly and is glossy, stirring occasionally.
  16. Serve the Spicy Sweet Chicken Diablo hot over cooked rice.
  17. Garnish with chopped green onions and sesame seeds.
